Yellow curry is one of my favorite flavors and the kids absolute love it as well. Plus, it's extremely simple and affordable to make and you can always find new ways to change it up. This version of yellow curry was amazing and nutrient dense as well! The tomato paste is what causes it to be more red, but the flavor is still like a yellow curry.
3 medium potatoes - chopped
2 carrots - chopped
1 red bell pepper - chopped
5 large collard leaves - finely chopped
1/2 an onion - chopped
1 can of coconut milk
2-3 cups of water
1/2 cup of tomato paste
3-4 tablespoons yellow curry powder
In a pot add in all ingredients and stir together until everything is mixed well. Simmer on medium heat until potatoes and carrots are soft. Serve over red lentils, cauliflower rice or eat as is!
