Raw Vegan Thumbprint Cookies

These are super freaking delicious and only 3 ingredients. It can be hard to find sweet 'gourmet' raw recipes that do not include any overt fats. That is why I decided to come up with this recipe. These are also great because they are pretty calorie dense, so for those who are trying to make sure they get in enough calories, these can help out a lot.


2 cups dried mulberries

2 cups pitted dates

1 cup strawberries


In a blender or food processor add in the dates and mulberries and blend until smooth. If the 'dough' is too sticky and soft to mold into cookies, put it into a bowl and place into the freezer for 10 minutes, this should harden it up and make it easier to mold. Next, take the 'dough' and mold into little cookie shapes and press down in the middle of each one to make the 'thumbprint' part of the cookie. It is best to place these on top of parchment paper because they can get quite sticky. After you have molded all of them, place the strawberries into your blender and blend until mostly smooth. Take the strawberry sauce and put it into the middle of the cookies. Place them back in the freezer for 5-10 minutes and enjoy! If you are wanting to make these and eat them at a later time, it is best to keep them in the freezer so they don't get too sticky.
