This recipe is of course simple, yet flavorful and healthy! It is nut free and full of minerals, nutrients and very hydrating due to the cucumber noodles. Keep in mind this is of course not going to taste exactly like a traditional Alfredo sauce, so don't get your hopes up! Just enjoy it for exactly what it is.
3/4 cup of raw hemp seeds
2 cloves of garlic
8 peppercorns or 1 teaspoon ground pepper
1 tablespoon onion powder
The juice from 1 lemon
1/2 tablespoon chia seeds
3/4 cup of water
Spiralize your cucumbers, place into a bowl and set aside. In a blender add in the remainder of your ingredients and blend until smooth. Pour sauce over cucumber noodles, mix together and enjoy!
Why hemp seeds over cashews or almonds?
Hemp seeds are an amazing overt fat. They are lower in fat per volume than a lot of other nuts/seeds and most importantly there omega 3 to 6 ratio is spot on! A lot of overt fats have a high omega 6 to 3 ratio, but not hemp seeds. This makes them an amazing overt fat to use. We love using them for ourselves and for our children.
