Raw mango bell pepper wraps with marinated veggies

Making raw wraps has been incredibly intimidating to me for a long time but last night I decided to try it out and see what happened! I just made up the recipe on the fly and they ended up turning out amazing. I put some lettuce, marinated veggies, tomatoes and a creamy hemp dressing inside and they were freaking delicious!


Wrap recipe:

3 large mangos

2 large red bell peppers

1/2 cup cilantro

2 small tomatoes

3 tablespoons chia seeds


Directions:

Add all ingredients into a blender and blend until smooth. Pour about 1-2 cups of the mix onto a dehydrator tray that is topped with either a teflon sheet or parchment paper (we used parchment paper). Evenly move around the sauce with a spatula into a circle. Be careful to make the sure that the sauce is spread out evenly.

Continue to make your wraps until all sauce is used.

Place trays into the dehydrator and dehydrate at 95 degrees for 6-8 hours. Check on them at the 6 hour mark to make sure they are not getting crispy. The key to making good raw wraps is all about the timing of when they come out of the dehydrator. Too little and they are mush, too long and they are crispy. If they do end up being a little too stiff, you can rub a small amount of water on them to get them to soften up.


Marinated veggies recipe:

1 yellow bell pepper

1/2 an onion

1/2 pound of mushrooms

The juice from 3 limes

1 tablespoon paprika


Directions:

Slice up the bell pepper, onion and mushrooms and add into a bowl. Mix in the paprika and lime juice. Add the mix into the dehydrator for 6-8 hours. If you don't have a dehydrator, no worries! You can just let everything marinate together in the fridge.


Hemp sauce recipe:

1 cup of hemp seeds

1/2 cup of water

1 cup of cilantro

1 clove of garlic

1/8 an onion

1 serrano pepper

The juice from 2 limes


Directions:

Add all ingredients into a blender and blend until smooth.


Once everything is done, take you wraps and place in some lettuce, tomatoes, the marinated veggies and the sauce. Roll up your wraps, cut in half and enjoy!


All of this made enough wraps for both me and Phillip, but we also ate more with our dinner as well, and could have easily had everything individually to ourselves as well.
