In my opinion, Ethiopian food is by far one of the most delicious cuisines that there is. It is so flavorful while also being healthy and simple. This meal is inspired by Ethiopian cuisine and uses a traditional Ethiopian spice; berbere. This is also a one pot meal and is super easy to make! Enjoy, and let me know how you like it.
3 cups chopped cabbage
1.5 cups dried red lentils
1 cup cubed sweet potato
1/2 cup tomato paste
8 ounces coconut milk
2-3 cups of water
1 teaspoon finely diced ginger
1 tablespoon berbere spice (a traditional Ethiopian spice.)
1 teaspoon garlic powder
1 teaspoon onion powder
This is a super easy recipe that takes a short amount of time to prep and cook! All you need to do is add everything to a pot, stir it together and cook on low-medium heat until it is done. Lentils should be soft and mushy.
