If you enjoy Ethiopian food you will enjoy these delicious cucumber noodles with a creamy tomato berbere sauce. While this is definitely not an authentic Ethiopian meal at all, the sauce does remind me of some delicious Ethiopian lentils, especially with some high quality berbere spice.
What is berbere spice? Berbere spice is a classic Ethiopian spice mix with spices like paprika, ginger, cinnamon, coriander and more! It is absolutely delicious. I don't know how I have gone so long without having this spice in my cabinet. I am sure it will show up quite a bit in future recipes.
Okay now for the recipe:
1/2 cup almonds
1 cup dehydrated tomatoes
1 cup fresh tomatoes
1-2 teaspoons berbere spice.
First spiralize your cucumbers, place into a bowl and set aside. Then in a blender add in the rest of your ingredients and blend until smooth, if you need more liquid, add in more fresh tomatoes. You want it to be thick and creamy, not too liquidy as the water from the cucumbers will balance it out. Once the sauce is done, add to the spiralized cucumbers, mix together and enjoy! Simple as that.
