Cauliflower stir fry with cilantro ginger dressing - Vegan and oil free

Stir fries are a delicious way to enjoy lots of vegetables but most stir fries contain animal products, grains, oil and high amounts of sodium. This version is grain free, oil free, uses no soy sauce but is incredibly delicious and satisfying.

Stir fry ingredients:

1/2 a red bell pepper - chopped

1 cup chopped cabbage

1/2 cup corn

1 cup of peas

1 cup (cooked) chickpeas

large handful of snow peas

1.5 cups cubed sweet potato

1 cup chopped mushrooms

1 head of cauliflower

Sauce ingredients:

1/2 cup almonds

Large handful of cilantro

Thumb of ginger

Sweetener of choice (2 tablespoons lucuma powder, 2 dates, 1 tablespoon agave)

1/2 a jalapeno (optional)

Onion and garlic powder (to taste)

Stir fry directions:

First put the sweet potatoes in a large pan along with 3/4 cup of water and add lid. Let cook for 5 minutes. Next add in the remainder of your ingredients other than the cauliflower, mix together and cook for another 5 minutes. While the veggies are cooking, cut up your cauliflower, place it in a blender or food processor and pulse blend until it resembles the texture of rice. Once that is done, add it to your the pan and cook for an extra 2-3 minutes.

Sauce directions:

Add all ingredients into a blender along with 1 cup of water and blend until smooth.

This can serve as many as you like. I personally ate half of what was here, but eat at your hearts content! All of this alone provides 622 mg of calcium and 19 mg of iron plus many other nutrients, not to mention tons of fiber.
